- Preheat oven to 375°F. Lightly grease a medium baking dish (approximately 1.5–2 quart capacity).
- In a large mixing bowl, combine the softened cream cheese, sour cream, shredded cheddar, and Monterey Jack cheeses. Mix thoroughly until the mixture is smooth and well combined.
- Stir in the diced jalapeños (reserving a portion for garnish), cooked and crumbled bacon (if using), garlic powder, onion powder, smoked paprika, black pepper, and salt. Mix until all ingredients are evenly distributed.
- Evenly spread the prepared cheese mixture into the greased baking dish.
- In a small bowl, combine the panko breadcrumbs, melted unsalted butter, and grated Parmesan cheese. Sprinkle this mixture evenly over the top of the dip.
- Bake in the preheated oven for 20 to 25 minutes, or until the dip is bubbly and the topping is golden brown.
- Remove the baking dish from the oven. If desired, garnish with the reserved jalapeño slices and chopped fresh chives. Allow to cool for 5 minutes before serving.
- Serve warm with tortilla chips, crackers, or toasted baguette slices.
