03 - Transfer mixture to a mixing bowl. Gently fold in blueberries using a spatula, taking care not to crush the fruit.
04 - Refrigerate the mixture for 10 minutes to firm slightly, making it easier to shape.
05 - With slightly damp hands, form the mixture into 16 evenly sized balls, approximately 1 tablespoon each.
06 - If using coconut, roll each ball in the shredded coconut to coat evenly on all sides.
07 - Place bites in an airtight container and refrigerate for up to 4 days. For longer storage, freeze for up to 1 month and thaw in refrigerator before serving.
