# What You Need:

→ Protein

01 - 4 boneless, skinless chicken breasts (about 1.5 lbs)

→ Vegetables

02 - 2 medium zucchinis, sliced into half-moons
03 - 1 red bell pepper, sliced
04 - 1 red onion, cut into wedges
05 - 1 cup cherry tomatoes, halved

→ Marinade & Seasonings

06 - 3 tablespoons olive oil
07 - 3 cloves garlic, minced
08 - 1 lemon, juice and zest
09 - 2 teaspoons dried oregano
10 - 1 teaspoon dried thyme
11 - 1 teaspoon smoked paprika
12 - 3/4 teaspoon sea salt
13 - 1/2 teaspoon freshly ground black pepper

→ Garnish

14 - 1/2 cup pitted Kalamata olives, halved
15 - 1/3 cup crumbled feta cheese
16 - 2 tablespoons chopped fresh parsley

# How To Make:

01 - Preheat oven to 425°F. Line a large sheet pan with parchment paper or lightly oil the surface.
02 - In a large bowl, whisk together olive oil, lemon juice and zest, minced garlic, dried oregano, thyme, smoked paprika, sea salt, and black pepper.
03 - Add chicken breasts to the marinade and toss thoroughly to coat. Let sit for approximately 10 minutes while preparing vegetables.
04 - Distribute zucchini, red bell pepper, red onion, and cherry tomatoes evenly across the sheet pan. Drizzle lightly with additional olive oil and season with salt and pepper. Gently toss to combine.
05 - Position marinated chicken breasts among the vegetables on the sheet pan. Pour any remaining marinade over the top.
06 - Place pan in oven and roast for 25 to 30 minutes, until the chicken reaches an internal temperature of 165°F and vegetables are golden and tender.
07 - Remove pan from oven. Scatter Kalamata olives and feta cheese on top, then finish with a sprinkle of chopped fresh parsley.
08 - Serve immediately, spooning pan juices over chicken and vegetables.

# Expert Tips:

01 -
  • You’ll pull off a colorful, dinner-party-worthy meal in under an hour, yet it barely needs tending.
  • The tang and richness from feta and olives somehow make even a plain Tuesday feel special.
02 -
  • If vegetables are crowded, they’ll steam instead of roast—use a big enough pan for everything to caramelize.
  • Leaving the chicken un-marinated by accident once taught me that even 10 minutes in lemon-garlic marinade makes a difference—don’t skip it.
03 -
  • Always marinate your chicken, even briefly—that’s where the flavor starts to sing.
  • Lay tomatoes cut side up so they hold their juiciness instead of leaking onto the pan too soon.
