02 - 2 tbsp soy sauce
03 - 1 tbsp cornstarch
04 - 1 tsp sesame oil

→ Vegetables

05 - 3 cups broccoli florets
06 - 1 red bell pepper, sliced
07 - 3 green onions, sliced

→ Sauce

08 - 3 tbsp soy sauce
09 - 2 tbsp oyster sauce
10 - 1 tbsp hoisin sauce
11 - 1 tbsp chili garlic sauce
12 - 1 tbsp rice vinegar
13 - 1 tbsp brown sugar
14 - 2 tbsp water

→ Aromatics & Oil

15 - 2 tbsp vegetable oil
16 - 3 cloves garlic, minced
17 - 1 inch fresh ginger, grated

→ Garnish

18 - 1 tsp toasted sesame seeds
19 - 2 tbsp fresh cilantro, chopped

# How To Make:

01 - Combine the beef with 2 tbsp soy sauce, cornstarch, and sesame oil in a medium bowl. Toss to coat evenly and let marinate for 10 minutes at room temperature.
02 - Whisk together 3 tbsp soy sauce, oyster sauce, hoisin sauce, chili garlic sauce, rice vinegar, brown sugar, and water in a small bowl until sugar dissolves. Set aside.
03 - Heat 1 tbsp vegetable oil in a large skillet or wok over high heat. Add marinated beef in a single layer and sear for 1-2 minutes per side until browned but not fully cooked through. Remove beef from pan and set aside.
04 - Add remaining 1 tbsp oil to the hot pan. Stir fry minced garlic and grated ginger for 30 seconds until fragrant, being careful not to burn.
05 - Add broccoli florets and sliced red bell pepper to the pan. Stir fry for 2-3 minutes until vegetables are tender-crisp.
06 - Return seared beef and green onions to the pan. Pour in the prepared sauce and stir well to coat everything. Cook for 2-3 minutes until sauce thickens and beef is cooked through.
07 - Remove from heat. Sprinkle with toasted sesame seeds and fresh cilantro. Serve immediately with steamed rice or noodles.

# Expert Tips:

01 -
  • The sauce comes together in seconds and hits every flavor note, sweet to spicy to savory
  • Beef stays tender because of a simple marinade trick I learned from a restaurant cook
  • Everything cooks in one pan and hits the table in under 30 minutes
02 -
  • Crowding the pan with beef causes it to steam instead of sear, so work in batches if your skillet is not big enough
  • The sauce thickens quickly once it hits the hot pan, so have everything ready before you pour it in
  • Broccoli continues cooking after you remove it from heat, so pull it when it still has some crunch
03 -
  • Set a timer for the beef sear because overcooked beef ruins the whole dish
  • Have your ingredients prepped and measured before you turn on the stove
