# What You Need:

→ Bread Bowl

01 - 1 large round sourdough loaf (approximately 1.5 pounds)

→ Spinach Dip Base

02 - 2 tablespoons olive oil
03 - 1 small yellow onion, finely chopped
04 - 2 cloves garlic, minced
05 - 10 ounces frozen chopped spinach, thawed and squeezed dry

→ Creamy Mixture

06 - 8 ounces cream cheese, softened
07 - 1 cup sour cream
08 - 1/2 cup mayonnaise

→ Cheeses and Seasoning

09 - 1 cup shredded mozzarella cheese
10 - 1/2 cup grated Parmesan cheese
11 - 1/2 teaspoon kosher salt
12 - 1/4 teaspoon ground black pepper
13 - 1/4 teaspoon crushed red pepper flakes (optional)

→ For Serving

14 - Reserved bread cubes from hollowing loaf
15 - Raw vegetables (carrot sticks, celery, bell peppers), crackers, or chips

# How To Make:

01 - Preheat oven to 350°F. Using a serrated bread knife, slice off the top of the sourdough loaf and carefully hollow out the center, leaving a 1-inch thick shell. Set aside the removed bread pieces for dipping.
02 - Heat olive oil in a skillet over medium heat. Add the chopped onion and sauté until translucent, approximately 3 minutes. Add minced garlic and continue cooking for 1 additional minute until fragrant.
03 - Add the thawed, squeezed-dry spinach to the skillet. Cook for 2 minutes, stirring occasionally. Remove from heat and set aside.
04 - In a large mixing bowl, combine cream cheese, sour cream, mayonnaise, mozzarella, Parmesan, kosher salt, black pepper, and red pepper flakes if using. Mix until smooth and fully incorporated.
05 - Fold the spinach mixture into the cheese mixture until evenly distributed. Spoon the dip into the prepared bread bowl, packing it gently. Place on a baking sheet and bake for 25 minutes until the dip is hot and bubbly and the bread bowl is lightly crisped.
06 - Remove from oven and serve immediately while hot. Present with the reserved bread cubes and your choice of fresh vegetables, crackers, or chips for dipping.

# Expert Tips:

01 -
  • The bread bowl keeps everything warm for hours, so you are not constantly reheating
  • Something magical happens when the bread soaks up all those cheesy juices
02 -
  • Squeeze the spinach until your hands hurt, because any excess water will make the dip watery and separate
  • Letting the bread bowl cool for just five minutes after baking makes it easier to handle without burning your fingers
03 -
  • Place a baking sheet under the bread bowl to catch any butter that might drip during baking
  • If the top browns too quickly, tent it loosely with foil for the last 10 minutes
