05 - Remove chicken from pot, shred using two forks, and return shredded meat to the chili.
06 - Stir in black beans, cannellini beans, great northern beans, and frozen corn. Simmer for 10 minutes to heat through.
07 - Pour in heavy cream and simmer gently for 5 minutes, stirring occasionally until chili is thick and creamy.
08 - Taste and adjust seasoning with additional salt and pepper if needed. Serve hot garnished with cilantro, green onions, cheese, lime wedges, and sour cream.

# Expert Tips:

01 -
  • Its the kind of hearty comfort food that fills your whole kitchen with incredible aromas but comes together in about an hour
  • Three different beans create this perfectly creamy, satisfying texture that still feels light enough for any night of the week
02 -
  • Mashing about a cup of the beans against the side of the pot before adding the cream makes the texture incredible, like you've been simmering it all day
  • If you use rotisserie chicken, add it during the last 10 minutes just to heat through instead of boiling it until it's tough
03 -
  • Leaving the seeds in half the jalapeño gives you this beautiful slow building heat that hits you at the very end of each bite
  • A splash of lime juice right before serving cuts through the cream and makes all the flavors pop like nobody's business
